One Bowl Raspberry Cake - heavenly light and fresh


  • 3 eggs
  • 1 cup oats
  • 2 1/2 tbsp coconut oil
  • 3 tbsp stevia sugar replacement for baking (1-to-1 replacement for sugar), if you want it on the sweeter side, add 4 tbsp or just taste the batter until you like the sweetness. You can use also muscovado sugar (4-4 1/2 tbsp of muscovado sugar)
  • 2 tbsp yogurt
  • 1 cup frozen raspberries
  • 1 tbsp Vanilla sugar
  • 1 tbsp Baking powder


    1. Put all of the ingredients except the frozen raspberries in one bowl.
    2. Blend them together until smooth.
    3. Add the frozen raspberries and stir with a spoon until mixed well.
    4. Put on a baking paper in a cake form.
    5. Bake at 350°F (180°C) for about 20 minutes until golden brown and the knife comes out clean from the cake.
    6. Take out and let sit to cool down.
